  • 1.  Unreasonable Hospitality and The Bear

    Hello VSS 2023 Group:

    I hope everyone had an enjoyable and productive trip to Dallas. Over the years I've been a part of many events like this but never have I seen a group of professionals bursting at the seams to share and learn from eachother like this one. It was like removing a lid from a boiling pot!  Very exciting.

    Just wondering if anyone did their assigned homework by reading the book Unreasonable Hospitality or watching the cable series The Bear yet?

    The restaurant industry is full of passionate people who definitely needed a lift post-covid and these two offerings are like a lightning rod re-energizing why people love what they do.

    Hi Phil,

    I received my copy of the book two days ago, so I have my weekend reading sorted. Regarding "The Bear," one of my favorite aspects was the absence of a typical montage showing the characters getting better and cleaning up their workspace. Instead, the show portrayed a gradual improvement in small increments across episodes. Carmen slowly introduced his culture and traditions to a workplace that lacked them, and we witnessed the restaurant's growth over time as it transformed from merely following policies and procedures to embodying a true cultural identity. However, it's evident that there's still much work to be done.

    Stev - 

    I agree with the part about not forcing change, but more or less meeting each indivdual where they are and coaching them at their own pace to where you need them to be. I saw that in the way the main caracter, Carmy did that with each of his team mates. There's a lot in this series for everyone.
